Enjoying Malone’s Headcheese

With tender sections of pork, blended spices and bold flavors, Malone’s Headcheese can be used as a flavorful ingredient, a distinct deli item, or a satisfying snack. Here are just  a few of most common serving recommendations we’ve gotten from Malone’s customers:

  • Cubed or sliced with saltine crackers
  • Sliced on bread or biscuits
  • Folded into collard greens
  • Sliced with beets
  • Wrapped in a tortilla with sautéed peppers and onions
  • Slivered or cubed in leaf salad
  • Melted onto polenta or cornbread

Recipes

Pate & Pasta Primavera 

1 lb. fettucine, cooked
2 cups alfredo sauce, homemade or store bought
3 cups seasonal vegetables, cut into bite size pieces
2 cups Malone's country pate, chopped
1/4 cup chopped fresh herbs, parsley, basil, chives

Cook pasta according to package directions. Drain and rinse with cold water. Set aside.

In a large skillet, saute vegetables in olive oil until crisp tender. Add alfredo sauce and heat through. Add pate' and fresh herbs. Cook until pate' melts into sauce.

Servings: 4

The M2 Mac & Cheese

Elbow macaroni, cooked
Bechamel Cheese (white sauce)
Shredded white cheddar cheese
Ritz cracker crumbs
Malone's Mild
Malone's Hot

Pour macaroni into cast iron skillet. Cover with béchamel sauce, then white cheddar. Add cubes of Malone’s Mild and Malone’s Hot. Cover with cracker crumbs. Bake at 350 degrees for 15-20 minutes.

Bologna Bean Chowder

8 oz. navy beans
1 (16 oz.) can tomatoes
8 oz. bologna, cut in pieces
3 tbsp. dry onion soup mix
1 c. milk

Rinse, sort and soak beans in 3 cups water overnight. Do not drain. Add 1/2 teaspoon salt. Cover and simmer 1 hour. Add bologna, tomatoes and soup mix. Bring to a boil; reduce heat. Simmer 15 minutes, stirring occasionally. Add milk, heat through and serve. Like chili, this is a hearty meal.
